This 10-year-old Craigellachie with the number 39 is part of Signatory Vintage's 100 proof range and was bottled at 57.1% vol. without chill-filtering and without the addition of colouring. The Speyside matured in three different types of cask, including first-fill Pedro Ximénez hogsheads, second-fill Oloroso sherry butts and Dechar/Rechar hogsheads. For the Dechar/Rechar hogsheads, the charcoal layer in the cask was first planed off and sanded down before the cask was burnt out again and thus rejuvenated. The term proof is an old unit of measurement for the alcohol content of a drink, especially whisky, which indicates the minimum alcohol content above which gunpowder soaked in the liquid can be ignited. This method was used in the heyday of seafaring to ensure that the barrels in the belly of the ship could withstand the harsh weather conditions at sea.

In the heart of the Speyside near the little town of Craigellachie/Banffshire lies a distillery that was founded in 1891 at the peak of the Whisky boom and survived until today. Craigellachie Distillery is situated on a hill and overlooks the town.The difficult Gaelic name means “Rocky Hill” and is pronounced Krai-GELLacky.

Comment: One the nose, neat, sour, lime juice maybe, followed by some chalkiness and some sherry and red fruits. With water some maltiness and sweetness comes out and there's a minty note
On the palate, neat, sherry, dark chocolate, spices, lime juice and oak wood and being 100 proof, a good nip of ethanol. With water a nice sweet note comes out and that minty note from the nose.
Finish is oaky, cocoa-y, with a bit of lime and lovely red currant note.
Overall, not a whisky I'd recommend for beginners, there are some challenging flavours to tackle but for a malt veteran it's quite rewarding.
