The Kōloa Rum Company produces rum in small batches. The distillery is located on the small Hawaiian island of Kauaʻi, also known as the 'Garden Island'. Local sugar cane and rainwater from Mount Waiʻale'ale, the highest mountain and volcano on the island, are used for the Kōloa Rum. The Koloa Kaua i Dark is made from the mash of a Hawaiian raw cane sugar and double distilled in a steam-powered Copper Pot Still. The rum is then given a maturing period of several years in American white oak barrels. With filtered water from Mount Waiʻaleʻale, it is then diluted to 40% vol. drinking strength.
