Cavehill Bourbon is a tribute to the French and American farmers who simmered a combination of yeast, water and corn on homemade stills to create a new kind of spirit. At the Rabbit Hole distillery, the barrels are charred for 20 minutes before they are filled with the raw alcohol. This adds a mild and pleasant sweetness to the bourbon, which develops into a balanced overall result with spicy accents.
