With the St. Kilian Ex-Mugi Shochu, the German distillery is taking a creative new approach to the selection of casks for barrel maturation. To mark its 10th anniversary, a Single Malt made from Pilsner malt was created and matured entirely in a former Mugi Shochu cask. Mugi Shochu (barley shochu) is a Japanese spirit distilled mainly from barley and is known for its mild, nutty and balanced flavour profile. Mugi shochu is characterised by its softer and often clearer character compared to shochu made from other raw materials. Mugi Shochu is produced in a multi-stage process. This combines fermentation and distillation to preserve the grain flavours. The distillate (genshu) is stored for several months or years in tanks or wooden barrels to harmonise the taste and bring out the many facets of slightly sweet, nutty tones with subtle smoky aromas. The St. Kilian Single Malt was then matured in such a cask, giving it fruity aromas, subtle toffee notes and an inviting bouquet, which presents itself on the palate and in the finish with warming oak, ripe pears, crisp apples and vanilla cream with a hint of bittersweet fruit peel. This outstanding whisky was bottled at 55.5% vol. for the Lower Franconian distillery's Exceptional Range, in which St. Kilian releases exclusive, strictly limited and high-quality Single Malt Whiskies that are dedicated to special cask maturations and exceptional types of wood.

Herstellerbeschreibungon 02.04.2026
