The Holyrood Aged New Make Spirit 02: Plumage Archer has a fruity profile, which it received through 259 days of maturation in a first-fill bourbon cask. The young distillery in Edinburgh documents many details of its pioneer bottlings very extensively on the modern labels. For example, the fermentation time, which in this case is 120 hours.
